The region of Italy nobody photographs. All July, in Newtown.
There are no influencers in Basilicata. No trulli, no postcards, no coastline doing numbers on a feed. It's the deep South that people drive past on the way to somewhere else. Mountains, shepherds, bunches of red peppers drying in the sun outside the houses.
And that is exactly why the food is some of the most authentic in Italy. Born in kitchens that never had much and made everything count. For the whole of July our kitchen is cooking through it.

Slow-cooked chicken thigh in a rich tomato sauce with chilli, basil, onion, garlic and parsley.
Served with Alba’s roast potatoes. Rustic, warming and full of Basilicata character.

A soft hazelnut cake finished with Nutella and roasted hazelnut on top.
Rich, nutty and comforting, the perfect sweet finish.
